Peanut butter powder recently found its way onto supermarket shelves (although if you can’t find it in your local grocery store, you can order it online), and I can think of no better use of it than these outrageously sticky fluffernutter doughnuts.
INGREDIENTS
MAKES 8 TO 12 DOUGHNUTS
- 1 batch raised dough of choice
- 1 cup marshmallow crème
- ¼ cup creamy peanut butter
- 1 tablespoon cream or milk of choice, at room temperature
- Unsalted butter for greasing
- 2 cups peanut butter powder
DIRECTIONS
• Prepare the chosen dough for filled doughnuts and fry or bake as directed.
• While the doughnuts are cooling, whisk the marshmallow crème, peanut butter, and cream. Grease the inside of a pastry bag with butter (this will keep the marshmallow mixture from sticking) and fit it with a ½-inch star tip. Fill with the marshmallow mixture.
• Put the peanut butter powder in a bag, and shake each cooled doughnut to coat. Place the coated doughnut on its edge in a bread or cake tin, so that it can be easily filled from the top.
• Use a skewer or chopstick to create a hole in the top of each doughnut, then gently squeeze in about 2 tablespoons of the marshmallow mixture. Repeat with the remaining doughnuts
