You’re not likely to find tequila, lime, and salt topping the doughnuts in your local bakery. Good thing you can make them yourself! Fleur de sel adds a distinctive flavor and texture; if you can’t find it, use another good-quality, flaky sea salt. For an extra kick of lime, try filling these doughnuts with lime curd (using the Basic Fruit Curd recipe here).

INGREDIENTS

MAKES 8 TO 14 DOUGHNUTS

  • 1 batch raised dough of choice
  • 1 teaspoon freshly grated lime zest, plus more for garnish (optional)
  • ½ cup (60 grams) confectioners’ sugar
  • 2 teaspoons freshly squeezed lime juice (about ½ lime)
  • 1 teaspoon tequila
  • Fleur de sel for garnish (optional)

DIRECTIONS

• Prepare the chosen dough as directed, replacing the vanilla specified with the lime zest, and fry or bake as directed.
• To make the glaze, sift the sugar into a wide bowl large enough to dip the doughnut rounds in. Stir in the lime juice and tequila until smooth. Dip each cooled doughnut into the glaze and set on a wire rack to dry.
Sprinkle with fleur de sel and lime zest.
