Chocolate-hazelnut spreads like Nutella or Loacker make an addictively delicious filling for raised doughnuts. Adding a little whipped cream lightens the spread a bit, making it a little less rich and a little easier to pipe into the doughnuts.
INGREDIENTS
MAKES 8 TO 12 DOUGHNUTS
- 1 batch raised dough of choice
- 1 cup chocolate-hazelnut spread
- ½ cup heavy cream
- 1 batch Chocolate or Basic Sugar glaze
DIRECTIONS
• Prepare the chosen dough for filled doughnuts and fry as directed.
• In a medium bowl, whip the chocolate-hazelnut spread and cream using a hand mixer on medium speed until smooth and fluffy. Spoon the filling into a pastry bag fitted with a Bismarck (#230) tip. Holding a doughnut in one hand, plunge the tip into the side of the doughnut, pushing it about ¾ inch deep. Gently squeeze the pastry bag to fill the doughnut, withdrawing the tip slowly as you squeeze; you will feel the doughnut expand slightly as you fill it. Repeat with the remaining doughnuts.
• Glaze the top of each doughnut and let set before serving.
